BBQ Pulled Pork Nachos

We love smoking our own pork, portioning it into freezer bags, and pulling one out when nacho night calls. Paired with a homemade BBQ sauce (recipe coming soon!), melty cheddar jack cheese, and fresh toppings, these nachos are a flavor explosion.
The best part? They come together quickly and bake in less than 15 minutes.
Ingredients
4 cups pulled pork (pre-cooked, reheated with BBQ sauce)
½–1 cup BBQ sauce (depending on how saucy you like it)
2 cups shredded cheddar jack cheese (more if desired)
1 large bag tortilla chips (we like blue corn for color and crunch)
½ red onion, diced
2–3 green onions, thinly sliced
½ bunch fresh cilantro, roughly chopped
1 avocado, diced
½ cup sour cream (thinned with a splash of water for drizzling)
1 fresh jalapeño, thinly sliced (optional, for heat)
Instructions
Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper.
Prepare the pork: Reheat the pulled pork with BBQ sauce in the microwave or on the stovetop until warmed through.
Layer the nachos: Spread tortilla chips evenly across the sheet pan. Top with the warm pulled pork and then sprinkle generously with shredded cheese.
Bake: Place in the oven for 8–10 minutes, or until the cheese is fully melted and bubbling.
Add toppings: Drizzle on extra BBQ sauce, then layer with diced red onion, green onions, cilantro, avocado, and jalapeños (if using). Finish with a drizzle of thinned sour cream.
Tips & Serving
Make the sour cream drizzle: Stir a little water into your sour cream until it’s just thin enough to drizzle—it makes the nachos look extra pretty and evenly coats every bite.
Serve fresh: These nachos are best eaten right away. They don’t reheat well, so invite some friends or family and enjoy in one sitting!
